Massaman Curry

A mild but flavourful Thai curry, good for all the family

Ingredients

  • Oil – 1tbsp
  • Massaman curry paste – I like Mae Ploy brand, and used 50g
  • Coconut milk – one tin
  • Onions – equivalent to one fresh. Can be tinned (Eazy brand), frozen or dried and rehydrated
  • Potatoes – one tin, drained, cut into chunks
  • Frozen prawns – or other fish, chicken, Quorn or what you have available
  • Tamarind paste, if available
  • Half a teaspoon of sugar (optional)
  • Rice – microwave or regular, four portions, cooked

Method

  • Fry curry paste with the oil. 
  • Add the coconut milk and heat through
  • Add the onions, prawns and potatoes, and heat through
  • Add tamarind and sugar, to taste
  • Serve with cooked rice
